Katoukichibee Shouten is a sake brewery founded in 1860 and located in Sabae City of the Fukui Prefecture. its sake "Born: Yume wa Masayume", is known as Japan's top sake. Born is the Japanese royal family's favourite sake and has been served in many events internationally including the Cannes Film Festival, the 2002 World Cup Opening Ceremony co-hosted by Japan and South Korea, as well as the ceremony by which the Showa emperor ascended the throne. Born is the highest quality sake brand, it's name, "Yume wa Masayume", means "Dream come true." Born has won many awards internationally and was also presented to President Barack Obama from former Japanese Prime Minister Yukio Hatoyama in 2008 to celebrate his presidency. As the only restaurant in Toronto serving Born, we strongly encourage our customers to ask our servers about Born for the highest quality sake experience.

Exclusive Autumn Sake Pairings
秋之清酒宴

October is known to be the best time to observe maple leaves change colours, but it is also the best month for sake enthusiasts. The beginning of autumn marks the time when Risshun Shibori Sake (冷卸酒) is on the market. The sake is produced in the Spring then it is aged over the Summer and released in the Autumn, which is why it is also known as the "Fall wine". Sanma (Pacific Saury) is in season at the moment, and it's fattiness but lack of greasiness is the best match for Risshun Shibori sake. The migratory Bonito fish is also in season at the moment as the fish swim back to the southern part of Japan in Autumn. The fattiness of the fish mixed with the mature and mellow taste of the sake, is a mouth watering combination. Starting in mid October, every Thursday to Friday is when we offer the freshest fish from Japan and North American seafood. The seafood mixed with several kinds of flavours of high quality Japanese sake combines to provide the ultimate dining experience for Japanese food and Sake enthusiasts alike. 十月份在多倫多,是一個欣賞楓葉的好季節。亦是一個譲愛好日本清酒的老饔坐立不安月份。因為炎夏過去,秋季開始,是'冷卸酒'出現在市場的時侯。所謂'冷卸酒',是釀酒商把初春釀造的新酒,經過夏天成熟期,然後於秋涼之時推出市面。所以亦有'秋成酒'之稱。和'冷卸酒'的醇美極為配搭的便是最為時令肥而不腻的新鮮日本秋刀魚,以及這時回游往返日本南部近海的洄游鰹魚。魚的油脂,配上成熟香醇的'冷卸酒',實在令人垂涏三尺。本店於十月中起,逢星期三至星期五,以最時令的日本鮮魚及北美洲海産,配上數種不同口味的上佳日本清酒,製作出一系列的秋之清酒宴,以供愛好日本清酒與日本料理的客人享用。訂座請電 9058819500。
